🛒 Ingredients

For the Chicken

  • 1 split chicken breast

  • ½ to 1 tsp salt

  • ½ to 1 tsp onion powder

  • ½ to 1 tsp Italian seasoning

  • Mushrooms (any variety, cleaned and dried)

  • ½ to 1 tsp salt

  • ½ to 1 tsp onion powder

  • ½ to 1 tsp garlic powder

  • ½ to 1 tsp Italian seasoning

  • Freshly ground black pepper, to taste

  • 1 shallot, finely chopped

  • 4 garlic cloves, finely chopped

  • ½ cup red wine

  • 1–2 tbsp chopped fresh parsley

  • Extra virgin olive oil, for cooking

🔪 Step 1: Prepare the Chicken

  1. Ingredients:

    • Split chicken breasts

    • ½ to 1 teaspoon salt

    • ½ to 1 teaspoon onion powder

    • ½ to 1 teaspoon garlic powder

    • ½ to 1 teaspoon Italian seasoning

    • Freshly ground black pepper, to taste

    • Olive oil

    • ½ to 1 teaspoon Italian seasoning

    • Freshly ground black pepper, to taste

    • 1 shallot, chopped

    • 4 garlic cloves, chopped

    • Chopped parsley

    • ½ cup red wine

  2. Instructions:

    • Slice or quarter the cleaned mushrooms.

    • Season with salt, onion powder, garlic powder, Italian seasoning, and black pepper.

    • Heat a large skillet over high heat. Add the mushrooms and cook until they begin to brown.

    • Add the chopped shallot, garlic cloves, and fresh parsley. Stir well.

    • Once the mushrooms are deeply browned, pour in the red wine.

    • Let it simmer and reduce by half, concentrating the flavors.
